In my constant search for easy and yummy gluten free options I paid a visit to Trader Joes and got a HAUL of good things. For those that need gluten free, it’s the place to be for sure to escape the few standard options you see in most stores. This was the first thing I made because I was so excited to find gnocchi! Something I have dearly missed. So the “cheat” is how EASY it was! I used the pan/saute version on the back of the gnocchi (in lieu of boing water). Once they were hot and toasty I poured some of the autumn harvest sauce right in the pan and tossed it until it was hot and then plated to eat! Topped with some fresh parm and I was in heaven. I’ve come not to have high expectations of alternatives to old favorites, but this one met the mark all the way. Not just the flavors but the texture was both toasty and chewy just like wheat gnocchi. It wasn’t overly kale flavor or bitter at all either. The sauce has pumpkin in it and the combo was perfect. Happily surprised – go get some!!! I’ll be stocking my freezer!
