3 Ingredient Balsamic Chicken


One of my FAVORITE DISHES! It’s literally 3 ingredients, so simple, so yummy, and so versatile!

I like to use skinless chicken thighs because I cook this for a bit to reduce the balsamic with the chicken IN it, and it can handle it without getting dried or chewy like breast meat, but you can substitute it if you remove the meat from the sauce sooner. I make a decent portion because I like having a tastey protien source ready and on hand to make so many things quickly.

You’ll notice most of these are fast & easy three ingredient dinners- I’m a busy momma! 😉 If I can save you some time for a great meal that makes me so happy to share. Some things I use it for (besides eating it by itself as soon as its done… because… yuuummmm)!

-Balsamic chicken over brown rice and peas (like a rice bowl) -Keep it cold, slice on top of iceburg salad with grated fresh parm and hemp seeds and the dressing already comes on the chicken. – Just add a baked sweet potato & green beans for a healthy meal

Recipe: Add all ingredients in one pan, no mixing required!

8 skinless boneless chicken thighs

2 cups balsamic vinegar (I know it seems like a lot, trust me)

2-3 tablespoons local honey (can substitute agave syrup OR for keto, you can use natural birch sweeteners, but add at the end to taste once the sauce is reduced)

A few dashes thyme, and salt only to taste if you want it .

Simply cook between medium to low so the vinegar is at a steady simmer. *tip* don’t inhale to deeply over the pan HAHA it IS vinegar! Cook the chicken thoroughly flipping half way through. I also like to kind of smash it a little with the tongs to break into smaller pieces for portioning and the vinegar breaks it down to be so tender its very easy. Once the chicken is cooked, re move and put aside. Then turn up the heat and you can whisk or use a rubber spatula to keep the sauce moving so it doesn’t burn while it reduces to coating the back of a spoon. Simply pour over your cooked chicken and Viola! It’s both savory and a little sweet and goes with almost anything – it’s an irresistible staple for me to have around. Enjoy! – Heather Favorite Things
